These knives feature a 420J2 stainless steel blade which has a PTFE coating, the benefit is the perfect balance of good edge retention, ease of resharpening while also having superior corrosion resistance. The handle has an ergonomic design which comfortably fits in your hand which is a necessity on those days when you fill the box. The blade protector is vented to allow any moisture on the blade to dry after use. The 9” model features a stiffer and wider blade giving you more power and strength to process larger fish. It also also features a dimpled blade which allows it to move through large fillets with very little friction and suction during the cutting process.
